Devilled Kidneys

12 lamb kidneys

1/2 cup Flour -- seasoned with cayenne pepper, mustard
powder, salt and pepper

Cooking oil and butter for frying

Knob of butter

Worcestershire sauce

4 slices white toast

Split each kidney in half and remove white core. Mix sufficient flour with
cayenne pepper, mustard powder, salt and pepper and dust the kidney halves
in the mixture. Heat the oil and butter in a heavy bottom frying pan until
very hot. Fry the kidneys for 2 to 3 minutes each side and arrange on the
prepared slices of toast. Add a knob of butter to the pan with a good
sprinkling of Worcestershire sauce, stir and mix with the juices over the
heat. Pour the hot mixture over the kidneys and toast.
