Russian Pepper Tomato Carrot Apple Paste - Adjika

4 3/8 pounds tomatoes
2 1/4 pounds carrots
2 1/4 pounds red apples
2 1/4 pounds red bell peppers
7 hot red peppers -- to 8 peppers
salt -- to taste
1 cup oil -- or more to desired consistency
minced garlic -- to taste
Grind tomatoes, carrots, sweet peppers, apples, hot peppers in a food mill or processor (do not over process).
Stew vegetables over low heat, stirring constantly for 2.5 hours.
Then add oil, ground garlic and salt to taste and boil for 10 minutes.
Put in jars and cover tightly. Keep in a fridge.
Makes 4 to 6 pints (8 - 12 cups, about 32-48 one-quarter cup servings)
