Dried Zahtar Spice Blend Pesto

1/2 cup Zahtar Spice Blend -- Mid-east spice blend of wild thyme or oregano, sumac, and crushed sesame seeds
6 Tbsp freshly grated Parmesan Cheese
2/3 cup virgin olive oil

Combine Zahtar Blend and Parmesan Cheese in a small bowl. Add olive oil and mix with a spoon until blended. Transfer to jar and store in refrigerator. Use in a recipe in place of basil pesto, or spread on pita bread for a snack.

Makes 1 1/2 cups (24 one-tablespoon servings)

ChupaNote: this makes a wonderful topping for flatbread or pizza with a sprinkling of Aleppo red pepper.
