Whole Cauliflower Roasted in a Spice Paste - Puhlgobi Masalam

1 medium cauliflower
Spice Paste:
6 TBSP oil
1 1/2 C onion finely chopped
1 TBSP garlic finely chopped
1 1/2 TBSP fresh ginger finely chopped
6 hot green chilis -- finely minced
1 1/2 TBSP ground coriander
1/2 tsp ground fennel
1/2 tsp ground cumin
1/2 tsp garam masala
1 TBSP flour
2 TBSP ground blanched almonds
1 tsp coarse salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
1/4 C slivered blanched almonds
For garnish: cilantro sprigs

Oven 400F
25-30 minutes to cook. Allow an hour for prep.

Preheat oven to 400F.
Core the cauliflower and remove the leaves, being careful not to break it
apart. Steam for 10 minutes and allow to cool.
Prepare the almonds: grind blanched slivered almonds.
Measure about the ingredients for the spice paste and have at the stove.
Heat 4 TBSP of the oil in skillet (or saucepan , if you are making the
accompaniment sauce). Fry the onion until lightly brown. Add the garlic and
ginger and fry for 2 more minutes; add the chilis and fry for another
minute.
Stir in the remaining ingredients and continue to cook for about 2 minutes
until it forms a thick paste. If it seems too thick, add a little water.
Remove from heat and allow to cool.
Prepare the sauce: in the same saucepan you used for the spice paste, heat
the oil and fry the onion, stirring constantly until light brown, about 6
minutes. Add the cumin and fry for another minutes; then add the tomatoes,
water, and salt. Bring just to a low boil, reduce heat and simmer for about
15 minutes. Remove from heat and stir in chopped cilantro and keep warm.
Stuff about half of the spice paste into the bottom of the cauliflower,
being sure to get it between the florets. Spread the remaining paste on top
and arrange in an oiled shallow casserole dish. Sprinkle with sliced almonds
and drizzle the remaining oil over it. Bake on the middle rack for 25-30
minutes until browned and glazed.
To serve, remove the cauliflower to a heated serving platter and arrange the
cilantro around it.
