Niku Jaga - Japanese Simmered Beef Stew

3 medium white potatoes
2 medium onions
1 large carrot
4 oz konnyaku noodles*
3 ounces sliced beef (flank steak is good)
2 TBSP peanut oil
1 1/2 cups soup stock (dashi)
2 TBSP sake
1 TBSP soy sauce
1 TBSP mirin
salt a pinch
This is typical Japanese mom's home cooking, good for cold weather.
Peel onion and slice thinly. Peel carrot and potato, cut into a bite pieces.
Cut beef into bite-sized pieces. Separately, boil konnyaku for 2 minutes and
drain.
Heat oil in a pot. Saute beef over high heat quickly and at once take out.
Saute half sliced onion well. When onion becomes soft, saute the rest of
onion, potato, carrot. Add soup stock and simmer for 10 minutes. Return
meat to the pot. Add mirin, soy sauce, sake, a pinch of salt. Simmer for
more 5 minutes. Keep for 2 hours for flavours to develop. Before serving, a
garnish of cooked green peas is pleasant to view.
*If you cannot find Konnyaku noodle, other noodle can be used; or leave out.
