Sayur Udang - Indonesian Shrimp And Spinach Curry

1 lb shelled shrimp
1 bunch spinach, stemmed and coarsely chopped
1 chopped onion
1 can coconut milk (14 oz)
1 tsp minced garlic
1 tsp yellow curry powder
1 tsp sambal ulek
2 tsp oil
salt to taste - about 3/4 tsp coarse Kosher salt
Spring onions, sliced, to garnish

Saute the onion in the oil in a deep pan until the onion is soft. Add the
garlic, curry powder, sambal ulek and saute until combined and the flavors
are released. Add the shrimp, the stock, and the coconut milk and bring to
simmer. Do not boil or the shrimp will be tough. Add the spinach and simmer
until soft. Add salt to taste. Garnish with sliced spring onion to serve.

This aromatic yellow curry is one of my favorite soups. Enjoy !
