Saag Paneer - Spinach With Tofu

1 lb baby spinach
1 lb medium-hard tofu -- drained
3 TBSP oil (sunflower oil)
1 white onion -- finely diced
3 tsp minced ginger
3 tsp minced garlic
1 tsp fenugreek seeds
1 tsp turmeric
1 tsp red chili powder (pasilla)
2 tsp ground coriander
1 tsp garam masala
1/2 tsp ground fennel

I use medium tofu in place of panir in this lovely spinach curry.

Cube the tofu into pieces about 1 1/2 inch, quite large; set aside.
Heat the oil in a deep pan; add the, ginger, garlic and seeds and cook until
they pop and splutter. Stir in the spice powders. Add the spinach a bit at a
time, stirring until it wilts down. Add the tofu after the spinach has
melted, stir carefully but well, cover and remove from heat. Allow flavors
to marry for a time; adjust seasonings if needed.
Serve with channa masala (curried chickpeas), steamed Basmati rice, cucumber
raita, hot mango chutney and flatbread.
This dish can be served warm or at room temperature.
