Chana Masala or Chole - Curried Chickpeas

2 cans chickpeas -- 15oz
1 can chopped tomatoes -- 15oz
1 onion -- finely diced
2 tsp fresh ginger -- finely minced
2 tsp garlic -- finely minced (2 to 3)
2 bay leaves
1 pinch sugar
3 TBSP oil
----Seeds----
1 1/2 tsp charnushka
2 tsp cumin
7 whole cloves
7 black peppercorns
6 green cardamom pods
----Powders----
2 tsp ground coriander
2 tsp garam masala
1 teaspoon turmeric
2 tsp chili powder (pasilla)
1/2 tsp black pepper
Heat the oil over medium heat; add the seeds and allow them to pop. Add the
garlic and ginger; cook for a minute. Add the powders and stir for a few
seconds. Add half the onion and stir until the onion becomes translucent.
(If it becomes too dry, add the liquid from the canned beans.)
Add the beans, bay leaves, the rest of the onion, and the tomatoes. You may
like to add about 1 cup of water if there isn't much liquid in the tomatoes.
Allow to simmer for about 20 minutes until the onions are completely cooked
and the flavours have married.
Serve with naan. This is excellent combined with Saag Paneer.
