Uncle's Poached Fish

1 1/2 lbs white fleshed fish fillets
Poaching Liquid:
2 Litres spring water
2 slices lemon
4 green onions cut in 2" segments
4 slices ginger -- bruised
3 smashed cloves garlic
Sauce:
1 TBSP peanut oil
1 TBSP minced fresh Ginger
1 TBSP minced Garlic
2 Spring onions -- sliced
1 C chicken stock
1/3 C rice vinegar
2 TBSP soy
3 TBSP br sugar
1 tsp chili bean sauce (optional)
2 TBSP hoisin
1/2 tsp Sriracha hot sauce -- (more !)
2 tsp corn starch dissolved in 1/4 C cold water
For garnish: slivered spring onion
Prepare the sauce: Heat the oil in a wok and stir fry the ginger, garlic and
spring onion. Add remaining ingredients and heat until thickened. Set aside.
In a shallow pan (wok or skillet), bring water to a boil. Add fish fillets
and return just to a boil; reduce heat and simmer low until fish has turned
white, about 6-8 minutes. Drain fish and remove to a serving platter; dress
with sauce and garnish with slivers of spring onion.
