4 boneless centercut pork loin chops -- julienned
1 can bamboo shoots, strips -- drained
12 ounces spaghetti, cooked
3 tablespoons peanut oil
1/3 cup shallot -- minced
1/2 cup chicken or pork stock
1/2 teaspoon dried crushed red chili -- to taste
1 tablespoon fish sauce
2 tablespoons lime juice
1/2 cup cilantro
2 Tablespoons roasted unsalted peanuts -- chopped, for garnish
Description: Tangy Thai inspired stirfry.
Cook the noodles; set aside.
Cut up the pork and prepare the rest of the veg; measure out the fish sauce,
lime juice and chili.
Heat the oil in your favorite wok or stir-fry pan, Stirfry the pork until
golden; add in the garlic and shallots and cook until fragrant and somewhat
translucent. Add in the rest of the veg and saute; add in the rest of the
ingredients except the peanuts. Stir in the cooked noodles until heated
through. Garnish with the peanuts.
