Sweet and Hot Chicken Curry With Mango Flavour

Seeds:
1 tsp mustard seeds
1 1/2 tsp Comino seeds
Aromatics:
6 large cloves garlic -- minced
2 sliced onions
1 bell pepper -- cut in chunks
3 small fresh hot chillis (Jap bunching hot)

Powders:
1/2 tsp asafoetida
1 tsp aamchur
1/4 tsp cayenne
1 tsp coarse salt
2 tsp paprika
1/2 tsp turmeric
Other Ingredients:
6 boneless chicken breasts -- cut in 1" chunks
6 TBSP mustard oil
1 shredded apple
1 C currants
2 shredded carrots
1/2 block mango paste
1 can chicken broth
1 pkg chicken gravy mix
Heat oil in a large wok or karhai. Add the seeds and stir until they begin
to pop. Add the powders and stir for a minute to take the raw taste away and
release flavours. Be careful not to burn !
Add the aromatics and saute until the vegetables are beginning to soften; do
not brown. Add the remaining ingredients and cook until the chicken is no
longer pink inside, about 10-15 minutes.

NOTES : NOTE: be careful when using mustard oil; it is pungent to smell, so
do not get it too hot, but it is quite mild in flavour.
