Breakfast Miso Soup With Tofu

1 packet bonito bouillon (Shimaya brand)
2 liters water
2 spring onions thinly sliced
1/4 pound tofu diced small
5 Tbsp miso
2 tbsp nori finely chopped
Bring water to a full boil; turn off heat and count to 20. Sprinkle bouillon
in the water and stir to dissolve.
Placed half the tofu and spring onion in two bowls. Set aside.
Measure 4 C of bonito broth into a pan. Place the miso in a strainer
(miso-koshi), lower into the broth, and use a spoon to rub the miso into the
broth. Heat to a
simmer; do not boil.
When hot, ladle the broth over the tofu and spring onions in the bowls.
Sprinkle with finely chopped nori.
