Texas Hot Mess
2 large sweet potatoes
Salt (pickling salt)
1 1/2 C chopped brisket BBQ, extra black and extra wet
4 TBSP butter
1 tsp your favorite BBQ rub
3 spring onions, sliced
BBQ sauce, optional (if needed)
2/3 C shredded cheese - Jack, pepper jack, or sharp cheddar recommended
Ranch dressing, optional
Sour cream, optional
4 TBSP shredded cilantro leaves (a hand full)
Wet the sweet potatoes and salt them. Bake on a tray at 350F until tender,
about an hour and a half.
Heat the brisket in a saucepan, adding more sauce if you like.
Split them open and put 2 TBSP of butter in each one. Sprinkle with your
favorite BBQ rub, 1/2 tsp each.
Spoon on each one 3/4 C of brisket, the wetter the better.
Sprinkle half of the shredded cheese on each.
Slide these back in the oven for about 5 minutes to melt the cheese and make
sure they are good and hot.
Top with sliced spring onions and either ranch dressing or sour cream, and
sprinkle on the cilantro.
