[MC-AllEthnic-Recipes] Migas

4 eggs
1/4 C half N half or cream
1/2 onion, small dice
1 tomato, diced
1 jalapeno, seeded and finely diced
1/8 tsp black pepper
pinch of salt
1/4 tsp chili powder blend, recommend Gebhardt's brand
1 C corn tortilla chips, crushed
1 TBSP corn oil

Beat the eggs and cream together.
Heat the oil in a skillet and saute the onion, tomato, and jalapeno; add in
the chili powder, salt & pepper.
When the onions are translucent, add the corn chips and stir well to
combine.
Spread the mixture evenly in the pan, and pour over the eggs. Scramble to
combine and cook until the eggs are set.

Notes: If you are using salted corn tortilla chips, you might not need to
add any salt.
You can substitute 1 corn tortilla cut into strips in place of the corn
tortilla chips.
