Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 pounds turkey drumsticks -- (2 large) to 4 pounds
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
2 garlic cloves -- minced
Asian Slaw:
1 cup shredded red cabbage
1 cup shredded green cabbage
1 cup shredded carrots
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon lemon juice
Use a 4-qt slow cooker.
Place 2 turkey drumsticks in the bottom of your slow cooker. I always try to remove as skin as I can when using poultry - but it's your choice. In a small bowl, combine the soy sauce, brown sugar, vinegar, and minced garlic. Pour the sauce over the turkey legs, then flop the drumsticks over a few times so they are evenly coated on each side.
Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours. Serve on top of the Asian slaw.
Make the slaw: While the turkey is cooking, prepare the slaw in a large mixing bowl. Combine the shredded cabbage with the carrot and set aside. Prepare the dressing in a small bowl by whisking together the olive oil, soy sauce, brown sugar, and lemon juice. Toss the cabbage and carrot with the dressing, and refrigerate until serving time.
