Basil-Garlic Orzo

1/4 pound orzo
1 teaspoon olive oil
1/2 cup chopped fresh basil
2 cloves garlic -- crushed
Salt and freshly ground black pepper

In a large pot, bring 4 cups of water to a boil for orzo.
When water boils, add orzo and cook for 9 minutes or until tender.
Drain, return to pot and add oil, basil, garlic and salt and pepper to taste.
Mix and serve.

Total time: 10 minutes

ChupaNote: This works well with spinach (kale, collards, mustard greens) in the winter. Or mixed herb leaves from your summer garden: mint, basil, parsley, cilantro etc. Add minced Kalamata olives, capers, crumbled feta cheese, julienned beets, butter beans, and halved-grape tomatoes for a meal.
