Arab Herb Dressing

1/2 cup yoghurt -- plain, whole milk
1 tablespoon parsley -- finely chopped
1 tablespoon lemon juice
1 tablespoon grated horseradish
1/2 teaspoon salt
6 celery leaves -- finely chopped
1/2 tablespoon chives -- chopped
1 tablespoon orange juice
1 tablespoon paprika pepper
1 tablespoon mint -- finely chopped
Beat yoghurt a few times and add lemon and orange juice. Stir well, then add all other ingredients. Whisk for 5 minutes before serving.
Makes 3/4 cup (3 one-quarter cup servings)
ChupaNote: All Arab countries make some form of this yogurt and herb sauce. Its great on pilafs, baked potatoes, or with steamed veggies.
