Turkish Tomato and Chile Relish

1 pound really good tomatoes
2 tablespoons tomato paste
1 tablespoon extra virgin olive oil
4 green chiles -- seeded and minced
1/3 cup minced red onion
salt and pepper
chopped fresh basil -- or parsley, if desired
Start by finely chopping up the tomatoes, and season them with salt and
pepper:
Place the tomatoes in a fine mesh sieve over a bowl for 30 minutes so the
excess liquid can drain.
Once the tomatoes have drained, mix them with the tomato paste, extra
virgin olive oil, minced green chiles, minced red onion, and fresh herbs
(if using). Taste and adjust seasoning as necessary.
Serve with chips or spread it on your hamburger buns the next time you're
making [bean] burgers. Enjoy!
