Mexican Red Rice - Arroz Roja

2 tablespoons canola oil
1 1/2 cups medium-grain rice
1 small onion -- minced
1 garlic clove -- minced
1 serrano pepper -- minced
1 cup tomato puree
2 cups stock
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
Heat the oil in a medium saucepan over medium heat. Add the rice, onion,
garlic, and pepper. Saute until the rice is nutty brown, about 8 to 10
minutes.
Add the remaining ingredients and bring to a boil. Reduce the remaining
ingredients and bring to a boil. Reduce the heat to a simmer. Cover and
cook for 25 minutes or until the rice is tender and has absorbed all of
the liquids. Stir and serve immediately.
Serves 6
