Greek Yogurt Cake

3 eggs -- at room temperature
1 1/4 cups light brown sugar
1/2 cup unsalted butter -- at room temperature
8 ounces low-fat plain Greek-style yogurt
1 teaspoon vanilla
1/2 cup milk
2 teaspoons baking powder
1/4 teaspoon salt
3 cups all purpose flour
1/4 teaspoon nutmeg
Preheat oven to 350F. Grease and flour a bundt pan.
In a large bowl, beat together the eggs, brown sugar, and butter until
creamy. Mix in the yogurt, vanilla and milk.
In a separate bowl, whisk together the dry ingredients. Slowly beat them
into the wet ingredients.
Pour into the prepared pan. Bake 55 minutes or until a knife comes out
clean.
Cook in the pan on a wire rack for 5 minutes before removing from the pan
to cool completely.
Serves 16
