Strawberry Royale
----Crust----
1/2 C coarsely chopped pecans
1 C flour
1/3 C brown sugar
1/2 C melted butter
----Filling----
4 egg whites
1/2 C sugar
2x 10oz pkg frozen strawberries
3 TBSP lemon juice
12 oz pkg frozen whipped topping (Cool Whip)
Oven 350F 9"X13" baking dish
Mix flour, sugar, nuts, and butter. Set aside 1/3 of the crumbs for the
topping. Spread remaining crumbs over the bottom of the pan. Bake at 350F
for 20 minutes, stirring often. Remove and let cool.
Beat egg whites until peaks form. Slowly add sugar and beat 5 more minutes.
Fold in lemon juice and thawed, undrained strawberries. Mix thoroughly.
Fold in whipped topping.
Spread strawberry mixture over crumbs in the pan. Sprinkle remaining crumbs
on top. Cover and freeze 6 hours or overnight. Remove and thaw 20 minutes
before cutting. Serves 12-16.
If substituting fresh strawberries, use 1 qt sliced and slightly mashed
strawberries and 1/2 C sugar. Allow to macerate for 20 minutes before
using.
RAW EGG WARNING: be careful, or use pasteurized egg whites (sometimes
available in the freezer or dairy case)
My mother-in law gave me this recipe back in the early 90's; it's very good
and quite easy!
