1/4 cup crushed dried piri-piri peppers
3 garlic cloves --7g Carbohydrate; trace Dietary Fiber minced
1/4 cup white vinegar
2 tablespoons dark brown sugar
2 tablespoons lime juice
1 tablespoon olive oil
1 piece fresh ginger root -- 1-inch long, peeled & grated
1/2 teaspoon salt
Place the ingredients in a blender and puree until very smooth.
Use immediately or pour into a lidded container and refrigerate up to 2
weeks.
Makes 1 1/2 cups (6 one-quarter cup servings)
AuthorNote: Piri-piri peppers are found in well-stocked supermarkets and
spice shops. Dried cayenne or piquins are acceptable substitutes.
