Pearl Couscous with Mixed Vegetables

1 tablespoon unsalted butter
1 tablespoon olive oil
1 small onion -- chopped
2 garlic cloves -- minced
2 zucchini -- diced
1/2 head Savoy cabbage -- sliced thinly
2 cups cooked pearl couscous
In a large skillet, heat the butter and oil. Add the onion, garlic, and
zucchini and saute until the zucchini is tender, about 5 to 10 minutes.
Add the cabbage and saute until it begins to wilt, about 5 to 10 minutes.
Add the couscous and saute 1 minute.
Serves 8
AuthorNote: Pearl couscous, sometimes labeled 'Israeli' couscous, looks
like a jumbo version of traditional couscous and is especially delicious
when cooked in stock rather than water.
