Lebanese Monk's Salad - Badhinjan al-Rahab

4 eggplants -- (about 4 pounds), each slit down the middle
3 large garlic cloves -- peeled
2 teaspoons salt
1/4 cup fresh lemon juice
1 green bell pepper -- peeled, seeded, sliced into half rings, or 4 scallions, chopped
1 medium ripe, but firm, tomato -- seeded and chopped
2 tablespoons finely chopped fresh flat-leaf parsley
1/4 pomegranate -- seeds only
1/2 teaspoon red pepper flakes -- (optional)
2 tablespoons extra-virgin olive oil -- to 3 tablespoons, or to your taste
3 large Arabic flatbread -- (pita bread), warmed and cut up
Preheat the oven to 425F.
Place the eggplants on a baking sheet and bake until the skin blisters
black, about 45 minutes. Remove from the oven and, when cool enough to
handle, scrape out the pulp into a strainer and leave to drain for 30
minutes.
In a mortar, mash the garlic with the salt until mushy.
In a large mortar, mix the garlic and eggplant pulp together, beating it
with fork. Add the lemon juice and mix it well. Spread the eggplant
mixture on a round serving platter and garnish the perimeter and top with
the pepper or scallions, tomato, and parsley. Sprinkle the pomegranates
seeds, and red pepper flakes, if using, on top, then drizzle with olive
oil and serve with pita bread.

AuthorNote: The Lebanese meze is called 'badhinjan al-rahab', the monk's
salad, a dish obviously popular with and derived from the Christian
community. It can be thought of as a tahini-less baba ghanouj and as a
result is even lighter in taste. This dish is called a salad because
that's how all vegetable dishes served at room temperature are thought of
in Lebanon.
