12 cloves garlic
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup vinegar -- or lime juice
1 cup olive oil
Process all the ingredients into a smooth paste.

Store tightly sealed in the refrigerator for up to three days.
Makes 2 1/2 cups (10 one-quarter cup servings)
