Turkish Bean Salad - Piyaz

2 cans navy beans -- drained
2 medium tomatoes -- chopped
1 small onion -- sliced
2 cups hardboiled eggs -- chopped
2 tablespoons olive oil
1 tablespoon red wine vinegar
Piyaz is a salad that is done in layers.
First, drain and pour the navy beans in a medium serving bowl.
Next, add hard boiled eggs.
Then, add chopped tomatoes, followed by the onions.
Mix olive oil and vinegar and drizzle over salad. Serve immediately or store in refrigerator for up to two days.
Serves 4-8 as part of mezzeh (starters),or 2-3 as a generous main dish.

Piyaz is a Turkish bean salad. It is often served as part of the mezzeh, or as a main course.
Piyaz is easy to make, has few ingredients, and is great the next day.
ChupaNote: to serve as a main dish, add 1/2 cup each fresh parsley and fresh mint, 1/4 cup fresh oregano or fresh basil.
