3 cups chopped Spanish Sweet onions
3/4 cup vinegar
2 1/2 cups sugar
1 teaspoon red pepper flakes
3 ounces liquid pectin -- 1 pouch
Place onion and vinegar in blender. Puree until smooth. Pour into saucepan. Add sugar and red pepper flakes. Bring to boil. Simmer 5 minutes. Stir in pectin. Boil hard for 1 minute. Pour into hot sterilized jars. Secure lids and process 10 minutes in boiling water bath.
Makes 3-1/2 cups (14 one-quarter cup servings)
This is a great appetizer spread for crisp crackers or a great condiment served with [favorites].
