Mediterranean Diabetic Baharat Spice Mix

1/4 cup ground black pepper
1/8 cup dried ground coriander
1/8 cup ground cloves
2 tablespoons ground cumin
1/8 cup ground cardamom
1 teaspoon fresh nutmeg
1/4 cup paprika
1/8 cup ground ginger
2 dashes crushed red pepper -- or to taste
Place all the ingredients in a glass jar. Cover jar with lid, and shake to
combine. Store for up to 2 months in a cool, dark place.
Makes 1 cup (16 one-tablespoon servings)
AuthorNote: Baharat is the Arabic name give to various spice mixes
throughout the Arab world. Each country has its own basic baharat for
fish, poultry, and meat. Homemade mixes vary according to prices,
availability, and personal preference. I like to prepare it in large
quantities ahead of time. That way, when I'm cooking, I don't need to take
the time to find the individual spices. Feel free to alter this recipe to
your tastes.
Take time to discover new spice combinations and scents. Spices are a
great way to add flavor without adding calories and fat. They also release
wonderful aromas while cooking, which allows our sense of smell to
transport us to magical locations.
