Green Tea Soba & Smoked Salmon Rolls - Noodles Every Day

4 ounces dried green tea soba noodles
12 sheets nori
8 ounces smoked salmon -- skin removed, meat c
2 cups sprouts -- OR micro greens, suc
soy sauce -- for serving
wasabi paste -- for serving
pickled ginger -- for serving
Cook noodles in boiling water until tender yet firm, 3 to 5 minutes. Drain & shock under cold running water. Drain again. Immediately separate noodles into 12 portions, straightening them out almost as they were in the package.
Wrap a sushi mat with plastic & place it in front of you. Put a nori sheet directly on top of the mat & add one portion of noodles, stretching it across the width of the sheet, & leaving 1" of nori on the edge farthest from you clear of noodles. Scatter some salmon on top of the noodles, beginning about 1" from the edge of the nori closest to you. Top with sprouts. Rolls the noodles & nori over the filling, enclosing the ingredients fairly tightly. Repeat until you have a total of 12 rolls. They should be about the size of a large cigar.
With a very sharp knife, trim the ends if necessary, then cut each roll into 8 equal pieces. Serve with soy sauce, wasabi, & pickled ginger on the side.
