Mediterranean Diabetic Gremolata - Italian

2 garlic cloves -- finely chopped
2 tablespoons fresh Italian parsley -- finely chopped
grated zest of 1 lemon
Combine garlic, parsley, and lemon zest in a small bowl or jar with a lid.
Stir to combine, and cover. Use immediately.
Makes 1/4 cup (4 one-tablespoon servings)
AuthorNote: Gremolata is a delicious blend of garlic, lemon zest, and
parsley. In the U.S. it is commonly used to top 'osso bucco', braised veal
shanks. It's also a wonderful topping for any soup, stew, or meat dish. In
addition, when garlic and parsley are combined in equal portions, the
parsley prevents the bad breath that raw garlic can cause.
ChupaNote: also makes a great sandwich spread for roasted red peppers. As
a soup base when mixed with vegetable stock or as a dip mixed with sour
cream or silky tofu; it is very versatile. Mix with 2 tablespoons olive
oil, 2 tablespoons melted butter (or margarine) and red pepper flakes for
a quick pasta sauce.
