Middle Eastern Spinach with Garlic Yogurt on Fried Arabic Bread

7 teaspoons extra-virgin olive oil
1 medium onion -- sliced 1/4" thick, and separated into rings
1 1/2 pounds spinach -- heavy stems removed and washed well
salt and freshly ground black pepper -- to taste
1 large garlic clove -- peeled
1 cup full-fat plain yogurt -- cow or goat's milk, at room temperature
1 teaspoon dried mint
3 tablespoons pine nuts
1 small Arabic flatbread -- pan-fried until crispy golden in olive oil
IN a large skillet, heat 5 teaspoons of the olive oil over medium-high
heat, then cook the onion until light brown on the edges and soft, 6 to 7
minutes, without stirring too much. Add the spinach, cover, and cook until
it wilts, about 2 or 3 minutes. Remove the cover, season with teh salt and
pepper, and turn the heat off until needed.
In a mortar, pound the garlic with 1/2 teaspoon salt until mushy, then
stir into the yogurt. Add the mint and whip with a fork to blend.
In a small skillet, heat the remaining 2 teaspoons olive oil over
medium-high heat, then cook the pine nuts until golden, 1 to 2 minutes.
Set aside.
Line a medium-size casserole with the fried bread. When it is time to
serve, briefly reheat the spinach, then cover the bread with the spinach
and onion and spread the yogurt on top. Sprinkle the pine nuts on top and
serve.
Serves 6, as a meze starter
AuthorNote: The dish is a meze variation of a famous
Lebanese-Syrian-Palestinian casserole called 'fattat al-sabanikh', which
is usually served as meze. It is a very convenient dish because all the
components can be made ahead of time, then assembled as a hot dish as the
last moment.
