Cousin Fatima Quick Lo Mein Sauce

3 tablespoons dark soy sauce
2 teaspoons toasted sesame oil
2 teaspoons brown sugar
1 teaspoon grated ginger root
1/2 teaspoon sea salt -- or less, depending on how salty your soy sauce is
1 teaspoon red pepper flakes
1/2 teaspoon minced roasted garlic -- prepared is fine (from a jar)
To serve: -- 1 pound cooked soba noodles or Chinese noodles, 1/2 cup thinly sliced green onions
Mix all ingredients, except noodles and green onions, together in a
micorwave safe bowl.
Heat through (about 30-45 seconds). Toss with cooked pasta and sprinkle
with sliced green onions before serving.
Serves 4
ChupaNote: Cousin Fatima tosses cooked soba noodles and a package of
frozen (thawed) Asian vegetables that she puts in the colander before
tossing her pasta water and hot noodles over them. She then pours the
whole thing (drained soba noodles and thawed Asian vegetables drained of
the pasta water) with the sauce.
