Sweet Potato Raita With Chaat Masala
1 large sweet potato
1/8 tsp cayenne
1/8 tsp black pepper
2 TBSP oil
----Chaat Dressing----
3/4 C plain yogurt
1/4 C sour cream
3 scallions
1-1/2 tsp chaat masala
Heat the oven to 350F. Oil a shallow baking dish.
Peel and dice the sweet potato into 1/2 inch cubes. You should have approx.
2 cups of cubes.
Combine the sweet potato cubes with the cayenne, black pepper and oil in the
baking dish and bake for about 40 minutes until tender but not mushy.
Set aside to cool completely, about 3 hours.
Slice the scallions quite finely into rings.
Stir together the yogurt, sour cream, chaat masala and scallions; gently
stir this mixture into the sweet potatoes. Allow to sit for a while to marry
the flavors.
I like this chilled, but it could also be served at room temperature. It is
a lovely light lunch, or as an accompaniment to a curry dinner.
Cook's Note: Chaat masala is an Indian spice blend that features kala namak,
black salt. It is widely available at Indian grocery stores.
I use MDH brand, which comes in a green box.
