Spicy Braised Eggplant

1/2 lb ground pork
4 Japanese eggplants -- rolling chunk cut
3 TBSP oil
1 TBSP ginger
1 tsp garlic
1/4 C spring onion
3/4 C diced shallots
1 tsp sambal oelek
1 TBSP chili tamarind paste (homemade !)
1/4 C oyster sauce
2 minced jalapeño peppers
1 TBSP soy sauce
1 TBSP sherry
2 tsp mein see (bean paste)
1 pinch o' sugar
2 TBSP mango paste
1/4 C nuoc cham (homemade!)
1 can chicken broth (Campbell's 12oz -- undiluted)
1 C chopped tomatoes (1 x 15oz can)
Garnishes:
Fried onion
Holy Basil chiffonade
Spring onion
Mint chiffonade
Add the oil to a hot wok. Stirfry the ginger, garlic, 1/4 C spring onion,
shallots, sambal ulek, chili tamarind paste until it bursts with aroma. Add
the ground pork and brown. Add the eggplants and saute just until soft. Stir
in the remaining ingredients and simmer for about 15-20 minutes. Garnish and
serve. This really ought to be served warm or at room temperature, and with
rice.
