Slow Cooker Farro Risotto

4 Tablespoons unsalted butter
1/2 cup finely chopped shallot
2 cups farro, raw -- rinsed with cold water
1/2 cup dry white wine -- such as Pinot Grigio, or Sauvignon Blanc, or dry vermouth
4 cups broth -- chik'n or veg
1/4 cup freshly grated Parmigiano-Reggiano cheese

In a small saucepan, melt 2 Tablespoons of the butter over medium-high
heat and saute the shallots for 3 minutes, or until the shallots begin to
soften. Add the farro, and stir to coat with the butter. Add the wine,
raise the heat to high, and cook, stirring, for 3 minutes to evaporate
some of the wine. Transfer the mixture to the insert of a 4 to 6-quart
slow cooker and stir in the broth. Cover the slow cooker, and cook on High
for 1 1/2 hours.
