     1/2         pound  tamarind pulp
  1                cup  sugar
                        juice of 1 lemon
 
Soak the tamarind paste in 4 cups of water for at least 10 hours. Then
dissolve the paste in the water with your hands or in a blender. Pass
through a fine sieve, pressing on the back of a ladle, and transfer the
liquid to a heavy-based saucepan. Stir in the sugar and place over low
heat. Simmer, stirring occasionally, for 30 minutes, or until thickened,
then add the lemon juice and continue simmering for another 20 minutes.
Pour into a sterilized bottle and seal the bottle only when cooled
completely.
 
To make the drink, use 1 Tablespoon syrup for each cup of ice water, or
adjust to your liking.
 
Makes 3 cups of syrup (48 one-tablespoon servings)

jars packed with ice or carried on the vendor's back in elaborate metal
containers. It provides a welcome refreshment at the height of summer heat
in Jerusalem or Cairo.
