Spanish Tomato Sofrito Sauce - Detox

2 tablespoons extra-virgin olive oil
6 garlic cloves -- minced
1 medium yellow onion -- diced
2 green bell peppers -- cored, seeded, and diced
1 jalapeno -- seeded and finely diced
1 bunch cilantro -- chopped
28 ounce canned crushed tomatoes -- 1 can
1 tablespoon dried oregano
2 bay leaves
1 tablespoon ground coriander
1 tablespoon ground cumin
1 teaspoon cayenne pepper
Salt and pepper to taste
Heat the oil in a large saucepan. Add the garlic and saute for 1 minute
until the oil is fragrant.
Add the onion, green bell peppers, jalapeno, and cilantro and cook until
the vegetables are soft (about 8 minutes).
Add the tomatoes, dried herbs, and spices and bring to a boil. stirring
often. Lower the heat and simmer for 30 minutes. Season with salt and
pepper as desired.
MAKES 1 QUART
This piquant sauce is a wonderful base for stews and tapas-style dishes, a
pan sauce for fish, and an accompaniment for grains or beans.
