  1              small  red cabbage -- about 1 lb 10 oz, finely shredded
  1              large  apple -- cored and diced
  2           handfuls  golden raisins
  2 1/4           cups  apple juice
  2               tbsp  cider vinegar -- (see tip)
1. Put the cabbage, apple, golden raisins, apple juice, and cider vinegar
into a large saucepan.
2. Bring to a boil, then cover and leave to cook gently for 25 minutes, or
until the cabbage is really tender, stirring once or twice during cooking.
3. Check the seasoning, and serve.
Serves 4-6
Tip: You can use ume seasoning instead of, or as well as, cider vinegar. A
little added to red cabbage intensifies the color as well as the flavor.
It's very salty; you only need a teaspoonful or so.
This is one of my favorite vegetable dishes: it's easy to make, is
delicious on its own or with some plain rice or mashed or baked
potatoes-it goes well with so many dishes-and provides a natural gravy for
the meal. This recipe makes quite a lot, but it reheats beautifully and if
anything is even better next day. It's even good cold. It's worth taking
the trouble to shred the cabbage quite finely because then it will cook
more quickly.
