Semolina Vegetable Crepes - Indian

1 cup semolina
1 cup all purpose flour
1 pinch salt
1 pinch black pepper -- finely ground
1/2 teaspoon chilli powder -- grated ginger
1/2 teaspoon grated ginger root -- or more, to taste
2 small fresh chili peppers -- seeded, ribs removed, and finely chopped
1 onion -- minced
1 tomato -- seeded, drained and finely chopped
Mix everything together. Add enough water to make a thin batter. Let it stand for 15 mins.
Heat a non stick flat pan. Grease it.
Put a ladleful of batter in the centre of the pan. Immediately spread the batter in a circular motion starting from the centre, to get a crepe. Must do it fast in spreading the batter, otherwise it will start cooking instantly and you end up with a thick crepes . The idea is to get thin crepes.
Drizzle margarine or olive oil around the edges and on top. Wait till it becomes golden and becomes a little crisp around the edges. Flip. Cook on the other side too till golden. Serve HOT

ChupaNote: the batter thickens as it sits, so work quickly or keep a cup of water or broth by the stove.
