Lebanese Almond Semolina Cake - Sfouf

For greasing: -- butter
2 1/2 cups fine semolina
1 cup all-purpose flour -- generous
2 teaspoons baking powder
1 teaspoon ground turmeric
2 1/4 cups superfine sugar
2 cups whole milk -- generous
2 large eggs -- lightly beaten
3/4 cup lightly salted butter -- generous, melted
1 teaspoon orange-flower water -- or rose water
1/4 cup slivered almonds -- blanched
2 tablespoons apricot jam -- warmed, to glaze [optional]
To serve: -- thick yogurt, runny honey to drizzle

Preheat the oven to 350F. Lightly butter a 9-inch square cake pan [or a 9 1/2-inch round pan), preferably with a removable base, and line the base with baking parchment.

In a large bowl, combine the semolina, flour, baking powder, and turmeric. Stir to mix, then make a well in the center.

In a seperate bowl, mix the sugar, milk, eggs, melted butter, and orange-flower water together untl evenly blended. Pour into the well in the dry ingredients and fold together until well combined. Pour the batter into the prepared cake pan and sprinkle the almonds over the surface.

Bake for 40 to 50 minutes until the ttop is golden brown and the cake is cooked through. To test, insert a skewer into the center; it should come out clean. Leave in the pan for about 15 to 20 minutes before unmolding onto a wire rack to cool. If you wish, brush the top of the cake with a little apricot jam to glaze.

Slice the cake and serve - either on its own or with a dollop of yogurt drizzled with a little honey.

AuthorNote: This delicious Lebanese cake is known as 'sfouf' and acquires its lovely yellow color from the inclusion of a little turmeric. Tis is a fairly large cake, but one that keeps well in an airtight container in the refrigerator for up to 5 days. Serve with hot mint tea or Turkish coffee at the end of a meal, or at coffee time.
