Crema Catalana - Spanish Creme Brulee

4 large egg yolks
1/3 cup superfine sugar -- generous
2 tablespoons cornstarch -- sifted
finely grated zest of 1 lemon
finely grated zest of 1 orange
1 cinnamon stick
1 cup whole milk
1 cup heavy cream
To sprinkle: -- raw brown sugar

In a large bowl, whisk the egg yolks and superfine sugar together until the mixture is pale and creamy. Whisk in the cornstarch and lemon and orange zests, then add the cinnamon stick. Now slowly pour in the milk and cream, whisking continuously.

Transfer the mixture to a heavy saucepan and cook over low heat, stirring constantly with a wooden spoon until the custard thickens enough to thickly coat the back of the spoon. At this stage, you should be to feel some resistance as you stir the mixture. Do not overheat or it may curdle.

Remove from the heat and strain the custard through a fine strainer into a pitcher. Pour the custard into 4 or 5 ramekins, depending on size. Allow to cool completely, then transfer to the refrigerator and chill until needed.

Just before you are ready to serve, sprinkle a thin layer of raw brown over the surface. If you don't have a blowtorch, place the ramekins on a baking sheet under a preheated very hot broiler until the sugar is golden brown. Either way, take care not to overheat the custards. Serve immediately.

AuthorNote: Similar to the French creme brulee but with a softer, thinner consistency, this delectable dessert holds an important place in Catalan cuisine. Traditionally, it is prepared by the matriarch of the family and served only on St. Joseph Day, March 19th. Once tried, you may be tempted to make this creamy custard more than once a year.
