I buy an extra turkey (or 2) in the fall when they are cheap, and pulled the
last one out to defrost yesterday. This will be on the menu later this week
after it has defrosted.
My Take on The Classic Kentucky Hot Brown Sandwich
Ingredients for 2 sandwiches
Sliced turkey breast meat (sliced quite thin) (2 slices for each sandwich)
Sliced tomatoes (2 slices for each sandwich) Cooked bacon (2 slices for each
sandwich) Shredded cheddar cheese, to make cheese sauce, and to top the
sandwiches - about 2 1/2 cups Texas Toast bread, not toasted but with the
crusts removed
Heat the oven to 350F.
Make a cheese sauce:
2 TBSP butter
2 Tbsp flour
2 C milk
1 C (more if you like) shredded cheddar
Dash of Tabasco
Whisk together the flour and butter over medium heat; whisk in the milk. Add
the cheese when the mixture comes up to a boil. Remove from heat and whisk
to combine thoroughly.
Arrange the bread in an oven proof dish or pan. Top with turkey and sliced
tomatoes; pour cheese sauce over. Sprinkle with shredded cheese. Put in the
oven for a few minutes to melt the cheese and heat through. Top with bacon
to finish. Serves 2.
Plan on having a nap after this. Not low calorie, but *Sooooo* good !
