Malaysian Onion Pickle

Amount Measure Ingredient -- Preparation Method

2 large onions -- finely shredded
8 bird's eye chillies -- finely sliced (8 to 10)
2 kaffir lime leaves -- finely shredded
1 Tbsp shredded ginger bud flower -- (bunga kantan)
1 tsp shredded lemon grass
Seasoning:
1 tsp salt
2 Tbsp castor sugar
1 Tbsp vinegar
Mix onions and all shredded ingredients with salt, sugar and vinegar. Toss well to mix, then put into an air-tight plastic container. Refrigerate until ready to serve. Makes a beautiful appetiser.
