5 Roma tomatoes
1 onion
1 stalk celery
1/4 cup minced fresh cilantro
1 teaspoon salt
2 tablespoons pepper
2 jalapeno chile peppers
1 tablespoon garlic -- minced
Place the tomatoes in water and bring water to a boil. Boil the tomatoes
for 3 minutes. Remove from water and place in ice water. Peel the skin
off.
Add all ingredients to a blender and process.
Serves 4
ChupaNote: this is way too much pepper, and I like it hot. Depending on
the heat of your jalapenoes, start with 2 teaspoons Aleppo red pepper
flakes and work your way up to something spicy but comfortable. I also
used 1/2 cup of minced fresh cilantro (include the stalks if very fresh).
Use roasted minced garlic for a more mellow taste. Sweet onion is
preferable. This recipe also works well with bottled roma tomatoes (not
canned. The tinny aftertaste is dreadful!). If you use a food processor,
you can leave some texture in the sauce; pulsing until you get a texture
that is pleasing. Refrigerate for upto a week.
