Spinach and Mushroom Stromboli

1 pound pizza dough -- thawed if frozen
To dust: -- All-purpose flour for work surface
1/2 cup pizza sauce -- plus 2 tablespoons pizza sauce
1 1/4 cups baby leaf spinach
1 1/4 cups sliced mushrooms
1/2 cup thinly sliced red onion -- plus 2 tablespoons
1 1/4 cups shredded part-skim mozzarella cheese -- (5 ounces)
5 tablespoons grated Parmesan cheese

Preheat oven to 400 degrees.
Line a large rimmed baking sheet with parchment paper or foil.

Divide dough into 5 equal portions. On a clean, lightly floured work
surface, stretch out each piece of dough to about a 6-by-8-inch oval.
Allow the dough to rest briefly if it becomes too elastic to work with.

Top each section of dough with 2 tablespoons of pizza sauce, 1/4 cup
spinach leaves, 1/4 cup mushrooms, 2 tablespoons red onion, 1/4 cup
mozzarella cheese and 1 tablespoon Parmesan cheese, leaving a 1/2-inch
border. Starting at one end, roll up each stromboli and place seam side
down on the baking sheet. Cut two slits in the top of each stromboli.

Bake until golden brown, about 25 to 30 minutes. Remove from oven and
serve.
