Slow Cooker Prune Custard Cake from Brittany - Far Breton

1/4 cup all-purpose flour
3 large eggs
1/2 cup sugar
1 cup whole milk
1 tablespoon Armagnac -- or cognac or 1 teaspoon rum extract
1 pinch salt
2 tablespoons unsalted butter -- melted, plus more for the dish
2/3 cup pitted prunes
Put the flour, eggs, sugar, milk, Armagnac, salt, and melted butter in a
food processor or blender. Process or blend until smooth, scraping down
the sides of the container. Place the container in the refrigerator for at
least 30 minutes.
Meanwhile, place the prunes in a bowl with hot water to cover. Let stand
for 20 minutes. Drain and pat dry.
Butter a 6-cup souffle dish that will fit inside a large slow cooker.
Place a rack in the insert of the slow cooker.
Scatter the prunes in the prepared dish. Carefully pour in the batter.
Place the dish on the rack. Cover and cook on high for 2 1/2 hours, or
until the custard is set around the edges but slightly soft in the center.
Let cool slightly. Carefully remove the dish from the slow cooker.
Cut into wedges and serve warm or room temperature.
Serves 6
AuthorNote: In the Brittany region of northern France, this clafoutis made
with plump, moist prunes is called Far Breton. Serve it with creme
fraiche.
