Ritz Cracker Angel Pie - Southern US

To grease: -- butter and flour, for the pan
3 large egg white
1 cup granulated sugar
1/2 teaspoon vanilla extract
3/4 teaspoon baking powder
18 Ritz crackers
2/3 cup coarsely chopped walnuts
1 pint very cold heavy cream -- (2 cups)
sugar -- to taste
To serve: -- fruit (such as strawberries), sliced and sugared to taste, for serving
Preheat the oven to 325F. Butter and flour a 9-inch pie plate.
Beat the egg whites until stiff, gradually adding the granulated sugar and
vanilla. Fold in the baking powder. Mix the crackers and nuts and fold
into the egg whites.
Scrape the mixture into the prepared pan.
Bake for 35 minutes. The pie will be craggy and cracked and set. Cool to
room temperature.
Whip the cream until its soft and thick and whip in the sugar to taste.
Fill the pie with the cream and serve with sweetened sliced fruit.
Makes 1 pie (serves 8)
AuthorNote: This was my mother's recipe, passed down from her own mother,
who probably cut it off the back of a box of crackers. My grandmother says
you can make this heavenly pie wit saltines, but I've only made it with
buttery golden Ritz crackers. Although they contain both partially
hydrogenated oil and high-fructose syrup, Ritz are worth buying if for no
other reason than to make angel pie.
