Slow Cooker Rice Pilaf with Golden Raisins and Pistachios

3 cups broth
3 cups water
3 cups converted rice
salt
1 sprig fresh rosemary -- 2-inch long, or 2 fresh thyme sprigs
3 tablespoons unsalted butter
1/4 cup minced shallot
1/2 cup chopped shelled pistachios
1/2 cup golden raisins
Combine the broth, water, and salt to taste in a large slow cooker. Add
the rice and rosemary and stir well. Cover and cook on high for 1 1/2 to 2
hours, or until the rice is tender.
Discard the rosemary. Stir in butter, shallots, pistachios and raisins.
Serve hot.
Makes 8 to 10 servings.
AuthorNote: Flecked with golden raisins, and green pistachios, this lovely
pilaf is good with [favorites]. Try it with other dried fruits and nuts,
too, such as apricots and almonds or cranberries and walnuts. Use
converted rice, which holds its shape and texture in the slow cooker.
ChupaNote: I used brown basmati. Its shape and texture were fine.
