  2             pounds  spinach -- washed and trimmed
  2        Tablespoons  peanut oil -- or vegetable oil
  1         Tablespoon  minced garlic
  1         Tablespoon  minced ginger
  1                     fresh jalapeno peppers -- stemmed, seeded & deveined, or 1 to 2 dried chiles
  1           teaspoon  good curry powder
     1/4           cup  water
                        salt and freshly ground black pepper
     1/2           cup  heavy cream
     1/4           cup  minced cilantro
 
 
Chop the spinach coarsely.
 
Heat the oil over medium-low heat in a steep-sided skillet that can later
be covered. add the garlic, ginger, and chile and cook, stirring, until
the garlic begins to color. Add the curry powder and cook, stirring, for
about another minute or so. Add the spinach, toss, and cover. Cook for 3
to 5 minutes, until the spinach wilts.
 
Check that the mixture isn't too dry; if it is, add the water. Recover the
skillet, reduce the heat to low and cook, stirring occasionally, for about
15 minutes, until the spinach is very soft and dark.
 
Uncover, add the salt and pepper to taste, and stir in the cream. Cover
and cook over the lowest heat possible for another 5 to 10 minutes,
stirring once or twice. Garnish with the fresh cilantro and serve
immediately.
 
Makes 4 to 8 servings
Time: About 35 minutes

I always felt that the cheese got in the way of this fantastic
preparation.
