Paulas Home-Style Tomato Sauce Base - Italian

2 tablespoons olive oil
2 tablespoons shredded prosciutto -- or pancetta (optional)
1 medium onion -- finely chopped
1 garlic clove -- chopped
1 small potato -- pared and thinly sliced
1/4 cup wine -- red or white
20 ounces canned tomatoes -- preferably organic (1 can)
1/4 cup sliced celery
1/4 teaspoon dried rosemary
1/4 teaspoon freshly ground black pepper
salt
sugar -- (optional)

Heat the olive oil in a small heavy skillet, and saute the prosciutto, if using, onion, garlic, and potato over medium heat until onion and potato begin to caramelize, about 10 minutes. Deglaze with the wine and, when evaporated, add the tomatoes, celery, rosemary, pepper, salt, and sugar, if necessary. Simmer for 20 minutes. Press through a food mill for a smooth texture.

Makes 1 cup
